Karela Fry / Bitter gourd fry recipe is one among the easy recipes you can make at home. This is one among the favourite dish in south india. If you want to bitter gourd to kids give in the form of bitter gourd fry really they loves to eat. This is not that much spicy as you think it is very tasty and crunchy.
Ingredients for Karela Fry / Bitter gourd fry
Bitter gourd – 3No.
Besan flour or gram flour – 4 tbspn
Rice flour – 1 tbspn
Asafoetida powder – 1 tspn
Turmeric powder – 1 tspn
Kashmiri chilli powder – 1 tbspn
Salt to taste
Oil to fry

Preparation
Cut in to think pieces for bitter gourd fry and add all the above ingredients mix it well and marinate for 1 hour. No need to add water if you add water bitter guord fry will not be crispy so no need to water to marinate. The salt in the mixture absorbs the moist in atmosphere that itself is enough.
Keep the pan in flame and add sufficient oil to fry approximately 500ml. Heat the oil in medium flame and throughout the process the flame should be in medium. Otherwise the fry will not cook properly. After the oil get heated up sprinkle the marinated bitter gourd in oil. Fry till it turns to golden brown colour.
This bitter gourd fry you can have as side dish with rasam with rice or vathakuzhambu and rice. Bitter gourd fry is ready to serve enjoy.
