Ingredients for Vathal Kuzhambu (Sundakkai vatha Kuzhambu)
Sundakkai vathal (Turkey berry dried) 2 tbspn
Garlic flakes – 20No.
Tamarind – 15g
Sambar powder – 1 tbspn
For seasoning
Mustard – 1tspn
Asafoetida – small piece
Fenugreek – 1tspn
Cumin seed – 1tspn
Curry leaves – little
Gingelly oil – to fry

Preparation
Heat the pan and add gingelly oil and let the oil get heated up then add Mustard, asafoetida, fenugreek, cumin seed, garlic flakes then sundakkai vathal (dry Turkey berry). You can replace Sundakkai with Brinjal, Drumstick, Small Onion, Manathakkali (black nightshade), etc. At this stage if you want you can add chop onion but onion is only optional. Soak the tamarind in warm water before ½ hour.
Now you have to add tamarind syrup, sambar powder and finally salt to taste. As the Sundakkai vathal (dry Turkey berry) consists of salt be cautious while adding the salt. Let the mixture boil and of thick consistency. The delicious Vathal Kuzhambu (sundakkai vatha kuzhambu) is ready. You can have this with hot rice and side dish as simple papad will do.
