Coconut Milk Rice is one of the lunch box recipe
which everyone can prepare within 30 minutes in the busy morning for lunch
box. How to prepare fresh coconut milk we
have made a separate post on this please.

Ingredients for Coconut Milk Rice
Rice – 1 ½ cup
Coconut Milk – 4 cups
Onion – 2
Ginger – Small piece
Garlic Cloves – 7
Green Chilli – 3
Mint leaves – little
Coriander leaves – little
Cashew nut – 10
Bay leaf – 1
Cinnamon – small piece
Aniseed – 1 or 2
Salt to taste
Oil or Ghee
Thoroughly was the rice and soak for 30 minutes and
drain the water completely. Peel the
skin of Ginger and garlic cloves transfer this to blender jar along with green
chilli and make as a paste. Keep the
pressure cooker in flame and add ghee and as soon as the ghee heated up add
bayleaf, cinnamon, aniseed, Cashew, Onion and saute the onion for 2 minutes
then the grinded paste of Garlic, Ginger and Green chilli and saute till the
raw smell go off.
Add the salt and after that coriander leaves and
mint leaves then add the coconut milk and let it to boil. Check the salt if require you can add the salt
at this stage. As soon as it boil add
the rice and leave for 4 whistles.
