Mysore pak is one of the favourite sweet in south india. This dessert is very easy to prepare and we
need patient to do this. This is one
among the popular South India sweet usually made during festivals. Its available in all sweet shops in south
india.

Ingredients for Mysore pak
Besan flour – 1cup
Sugar – 1½ cup
Water – ½ cup
Oil – 1½ cup
Ghee – ½ cup
Preparation of Mysore pak
Grease a tray with ghee and keep aside. Sieve the besan flour
to remove any lumps and keep aside. Heat the pan and add oil ghee mixture and heat that in
medium flame to smoking hot and after that keep in sim flame.
Add sugar in another pan and add ½ glass of water and keep
in medium flame. Let sugar syrup boil
and keep in sim flame and wait for the string consistency. This consistency of sugar syrup is very
important in Mysore pak recipe. If you
miss this consistency the whole sweet will collapse.
As soon as sugar syrup reaches string consistency add besan
flour little by little and stir constantly till the besan flour blend with
sugar syrup. At this stage keep the oil
in medium flame. After the sugar syrup
and besan flour mixture started boiling add scoop of hot oil and the mixture
turn frothy. Keep stirring continuously
until the mixture absorb oil and turn smooth and again add scoop of oil and do
the same.
Similarly continue adding the hot ghee-oil mixture in
batches until all of it is used up. Stir
the mixture continuously until it turn frothy and porus. When the mixture turns frothy and porous
switch off the stove and immediately transfer this into the greased tray. Gently level the surface using a greased
knife or spoon.
Let it cool for about 10 minutes and then cut into desired
shapes.Allow this to cool completely before removing from the tray. Amazing Mysore pak is ready to serve.
